Ingredients

- 1 chicken, cut into 8 pieces
- 1 white onion, chopped
- 1 celery rib, chopped
- 1 large carrot, chopped
- 1 can of peeled tomatoes
- 2 garlic cloves, minced
- 1 sage leaf or spinach
- 1 rosemary spring or dried
- A pinch of chilli
- 25 g of butter
- 2 tablespoons extra virgin olive oil
- Salt, to taste
- Pepper, to taste
- 1 glass of red wine
Instructions
- Pat dry the chicken pieces and set them aside.
- Place butter and extra virgin oil in a large skillet over medium heat.
- Add chopped celery, onion and carrot. Cook and stir for 5 minutes until softened.
- Add chicken pieces and brown them on all sides.
- Blend with red wine and cook until it evaporates.
- Add peeled tomatoes, sage, rosemary, a pinch of chilli, salt and pepper.
- Cover and cook for 45 minutes over medium-low heat, turning the meat occasionally.
- Serve and enjoy!
Notes
- You can serve the chicken with mashed potatoes, grilled polenta or salad.
- You can also add red bell pepper to enhance the sauce’s flavour.
- Add the herbs you like the most. For example, you can replace sage leaves with bay leaves or basil leaves or spinach.
