Chicken in Red Sauce

Chicken in red sauce is a low-cost and very simple recipe to prepare. You can serve it for any occasion and accompany it with many different side dishes to satisfy all palates. We chose a spicy version as a pinch of chilli gives a depth of flavour you have to love. But as with almost all tomato sauces, this one also gives you space for experimenting with herbs and spices.

  • Total Time: 1 Hour 25 Minutes


  • 1 chicken, cut into 8 pieces
  • 1 white onion, chopped
  • 1 celery rib, chopped
  • 1 large carrot, chopped
  • 1 can of peeled tomatoes
  • 2 garlic cloves, minced
  • 1 sage leaf or spinach
  • 1 rosemary spring or dried
  • A pinch of chilli 
  • 25 g of butter
  • 2 tablespoons extra virgin olive oil
  • Salt, to taste
  • Pepper, to taste
  • 1 glass of red wine


  1. Pat dry the chicken pieces and set them aside.
  2. Place butter and extra virgin oil in a large skillet over medium heat. 
  3. Add chopped celery, onion and carrot. Cook and stir for 5 minutes until softened.
  4. Add chicken pieces and brown them on all sides. 
  5. Blend with red wine and cook until it evaporates.
  6. Add peeled tomatoes, sage, rosemary, a pinch of chilli, salt and pepper. 
  7. Cover and cook for 45 minutes over medium-low heat, turning the meat occasionally. 
  8. Serve and enjoy!


  • You can serve the chicken with mashed potatoes, grilled polenta or salad.
  • You can also add red bell pepper to enhance the sauce’s flavour.
  • Add the herbs you like the most. For example, you can replace sage leaves with bay leaves or basil leaves or spinach.
