- 4 chicken thighs
- 4 chicken drumsticks
- 4 eggs
- 30 g parmesan, grated
- Flour, as needed
- Breadcrumbs, as needed
- Cornflakes, as needed
- 1 lemon, juiced
- 1 garlic clove
- Parsley, to taste
- Extra virgin olive oil, to taste
- Salt, to taste
- Black pepper, to taste
- Seed oil, for frying
Instructions
- Remove the skin from the chicken thighs and drumsticks.
- Combine lemon juice, extra virgin olive oil, minced parsley and garlic in a bowl.
- Add chicken thighs and drumsticks, mix well, cover and refrigerate for an hour.
- Crush the cornflakes in a zip bag and combine them with the breadcrumbs, grated parmesan, salt and pepper.
- Heat the oil in a large skillet at medium-high heat.
- Drain the chicken from the marinade and firstly coat it with the flour, then dip it in the beaten eggs and finally coat it with the breadcrumbs mixture.
- Fry each piece for 8 to 10 minutes until golden brown.
- Transfer fried chicken onto kitchen paper to absorb the excess oil.
- Serve and enjoy!
Notes
- Fry just 3 to 4 pieces at a time.
- Serve with fried potatoes, fresh salad or grilled vegetables.
- You can use the same coating for preparing chicken nuggets.
